Salads are the essence of good food. It’s just simple, honest produce – like fresh vegetables and salad leaves, maybe some local cheese or ham and some freshly-baked bread.
So why spoil it by drowning it in mass-produced and over-processed salad dressing?

We think dressings should be made from fresh, organic ingredients grown on the same farms that provide the salad. Tracklements, the company that makes our dressings, agrees.

The founder was a butcher called William Tullberg from Wiltshire. Bored with processed mustards, he unearthed a recipe for mustard from a seventh-century book and had a go at making his own. Nearly forty years later, the company he founded is run by his son, Guy, and has diversified into all kinds of pickles, relishes and sauces. It still values tradition, though, particularly the cook’s art of experimentation and refinement.

Even the company’s name is rich with heritage – it’s an old Lincolnshire word for condiments, passed down to William by his grandparents.

In the company’s small factory, its expert teams mix up small batches of dressing to ensure a perfectly fresh flavour. It’s a wonderfully simple blend of organic olive oil, mustard seeds, seasoning, cider vinegar and a pinch of fresh dill, parsley and tarragon.

And how do you know when it’s ready? When it tastes right – something you judge not by machinery, but by feel and experience.

Organic olive oil (67%), organic cider vinegar, organic herbs (dill, parsley, tarragon) (4%), organic raw cane sugar, organic wholegrain mustard, salt*, organic black pepper.
